Quick and Yummy Chocolate Chip Almond Cookies – She.Is.Beautiful & Heart Ping Life

If you are like us, you can find the energy to nail a walk, run or workout, but when it comes to having to mix cold butter, it seems like too much effort!  If you are THAT person who can’t summon the bicep strength to cream the butter OR the effort to rummage through the cabinet to find an electric mixer, this recipe is for you.  Also, if you have gotten obsessed with Skinny Dipped almonds like we are, this recipe is taken OVER THE TOP by adding them to the dough. 

Here it is and we’re HERE FOR IT:

Dry Ingredients:

2 ¼ cup Flour

1 teaspoon salt

¾ teaspoon baking soda

¾ cup chocolate chips

½ cup Skinny Dipped almonds chopped (we love the Super Dark Chocolate Sea Salt or Espresso variety)

Wet Ingredients:

1 stick of butter (completely melted)

2 eggs (beaten)

2 teaspoons vanilla

¾ cup Brown Sugar

¾ cup White Sugar

Instructions:

Mix wet ingredients in one bowl and dry ingredients in the other.  Combine and mix complete.  Drop spoonfuls onto a cookie sheet and put into a preheated 350 degree oven for 9-12 minutes (depending on how soft you like your cookies!).  Extra yummy when made into ice cream sandwiches.  Double the batch and drop them off on a loved one’s porch to spread the good!
